Here, we are far from an improvised natural coffee. It all starts with an ultra-targeted harvest over just four days, with cherries picked at the end of the day to prevent uncontrolled fermentation. Upon arrival at the Yaye station, they are immediately immersed in potable water to eliminate defects, then hand-sorted with impressive rigor: 95% perfectly ripe, 5% slightly more advanced to enrich the sweet profile.

Drying is intentionally slowed down thanks to shaded and well-ventilated raised beds. The result: up to 28 days of drying, with cherries constantly turned for perfect uniformity. Once stabilized at 12% moisture, the coffee rests for another six weeks before export. This precision at every step allows for the development of a clean and expressive cup, marked by notes of stewed red berries, dark chocolate, and a red wine-like acidity.

Odakko traceable project

The Odakko project is the culmination of four years of work between Testi Coffee and Cafe Imports, with a clear ambition: to create a unique coffee, fully traceable from start to finish. To achieve this, 50 small producers around Yaye were selected, all cultivating the 74158 variety, chosen for its quality and resilience. Each lot is harvested with extreme precision to capture the full potential of the terroir at its optimal moment.

Beyond quality, Odakko embodies a broader vision. A premium is paid to support local initiatives such as education and access to school supplies. Testi also pushes cleanliness standards to the highest degree, reducing defects related to contamination through strict protocols. This project embodies a comprehensive approach to specialty coffee, where every detail counts, from the producer to the cup.
