The La Fraylesca region, in southern Chiapas, is renowned for its ideal conditions for growing specialty coffee. Coffee plants there grow at high altitudes, in fertile volcanic soils and under a climate influenced by both the mountains and the humidity from the Pacific. This combination promotes a slow ripening of the cherries and allows the Caturra to develop a beautiful natural sweetness as well as remarkable aromatic depth.
The natural shade of the plantations and the surrounding biodiversity also contribute to preserving the balance of the soil and the quality of the crops. This terroir produces well-rounded, approachable, and particularly rich coffees, while maintaining a certain vibrancy in the cup.
In this lot, notes of bitter chocolate dominate intensely, accompanied by roasted hazelnuts and a fruity touch of red plum that brings relief and complexity. A rich, balanced, and warm cup, which demonstrates the full potential of Chiapas' great coffees.
