Grown at an altitude of nearly 1,700 meters in the highlands of Palestina, in Colombia's Huila region, this coffee benefits from an exceptional terroir where coffee trees thrive in the shade of indigenous trees. The Caturra and Tabi varieties flourish in a microclimate characterized by temperate days, cool nights, and well-distributed rainfall, promoting slow and uniform ripening of the cherries. Spread over some 2,750 hectares, the plantations thus produce extremely fine beans, offering bright acidity, a delicate body, and remarkable aromatic complexity. In the cup, this richness translates into a sweet and comforting profile revealing notes of vanilla, toasted nuts, and rice pudding, a gourmet signature that distinguishes this coffee from other great crus of Huila.
