At Patio Bonito, coffee is a story of legacy. Carlos Arturo Trujillo has been cultivating coffee for nearly 50 years, with a steadfastness that commands respect. But since 2022, new energy has been infused into the farm with the return of his daughter, Paola. Leveraging her experience as a buyer and cupper, she brings a technical and modern approach, notably by optimizing fermentations and introducing methods such as "thermal shock" and anaerobic fermentations. Together, they form a complementary duo, blending traditional expertise with bold innovation.
But beyond technique, what truly distinguishes the Trujillo family is their vision. Their work is built on three pillars: food security, soil management, and sustainable coffee cultivation. On their 11 hectares, 9 of which are dedicated to coffee, they cultivate 13 different varieties with an almost obsessive attention to detail. Their mission goes beyond mere production: they aim to transmit knowledge and offer a viable future for coming generations.
